This warming pumpkin-flavored breakfast bowl from our girl Be Well By Kelly tastes like a cross between chia pudding and a grain-free “oatmeal.” This nutritionist-approved breakfast is grain-free, dairy-free, refined sugar-free, and packed with protein. And unlike traditional chia seed pudding, you can whip it up in a matter of minutes instead of leaving it in the fridge overnight. Sounds delicious, doesn’t it? Warm Pumpkin Chia Seed Pudding (grain free “oatmeal”)
- 2 cups of unsweetened almond milk
- 1 serving vanilla protein powder (Primal Kitchen vanilla collagen protein is Kelly’s pick)
- 3 Tbsp pumpkin puree
- 2 Tbsp chia seeds
- 2 Tbsp ground flax
- 3 Tbsp hemp hearts
- 1 Tbsp pumpkin spice seasoning
Place all ingredients in a non-stick pan over medium heat. Whisk together until ingredients thicken to oatmeal-like consistency. Enjoy!
