I’ll be the first to admit that I’m not the greatest cook in the world… Actually, I think it’s safe to say that my kitchen skills are extremely limited. I can make a mean smoothie, or whip up a pretty delicious omelet, but anything beyond that is just not my forte. Which is why I rely heavily on easy-to-make and as-foolproof-as-possible snacks and meals. When I’m in a hurry, on the verge of hangry, and my pantry is looking a little bit bare (which happens more often than I’d like to admit), I turn to my go-to snack: a rice cake piled high with my favorite ingredients. I love the crunch of a rice cake, and since I buy the lightly salted, brown rice variety, I still feel like I’m making a healthy choice.

Depending on the time of day I’m making one of these, I switch up my toppings based on what sounds the best. In the morning, I’m all about a rice cake topped with almond butter, banana, chia seeds and a tiny drizzle of honey. When lunch rolls around and I’m craving an everything bagel with lox, I’ll create my own version on a rice cake. And later in the afternoon, a version with mascarpone and roasted red peppers satisfies my savory cravings. Healthy Rice Cake Tartines

Ingredients:

For the almond butter banana tartines: 

  • rice cakes
  • almond butter
  • honey
  • bananas
  • chia seeds

For the smoked salmon tartines: 

  • rice cakes
  • cream cheese
  • smoked salmon
  • Trader Joe’s Everything but the Bagel Sesame Seasoning Blend (you can find it here)

For the mascarpone and roasted pepper tartines:

  • rice cakes
  • mascarpone cheese
  • 1 red bell pepper (or you can choose to buy pre-roasted peppers)
  • olive oil
  • sea salt to garnish

Instructions: 

For the almond butter and banana tartines:

1. Begin by spreading your favorite almond butter on top of the rice cake.

2. Drizzle honey (or agave nectar, yum!) on top of the almond butter.

3. Slice up a banana and place the slices on top of the almond butter and honey.

4. Sprinkle chia seeds to top it all off and enjoy!

For the smoked salmon tartines:

1. Spread cream cheese on top of your rice cakes.

2. Place slices of smoked salmon on top of the cream cheese.

3. Sprinkle everything bagel seasoning on top of the smoked salmon and enjoy!

For the mascarpone and roasted pepper tartines:

1. Begin by roasting your red bell pepper over an open flame. We did this by holding the bell pepper over the stove so that each side was slightly burned and bubbly.

2. Once you’ve thoroughly roasted your pepper, place it into ice water so that the skin peels off easily.

3. Peel the pepper, deseed it, and then cut it into thin slices.

4. Place your red pepper slices in a shallow dish with a bit of olive oil until evenly coated.

5. Spread mascarpone cheese onto your rice cake, followed by the pepper slices.

6. Sprinkle a dash of sea salt on top and enjoy!
