During the summer we like to find every excuse to be outside. Sometimes that means spending a day at the beach or park, doing outdoor activities like taking a hike, or firing up the grill as the sun sets. Cooking outside gives us the opportunity to take as much advantage of the season as possible. That means firing up the grill and inviting all of our best friends over for a summer soiree! Let’s get it straight—no backyard bash would be complete without a seasonal menu that’s curated to perfection. That’s where this next recipe comes in…

When it comes to healthy grilling recipes, seafood is always at the top of our list. That’s why we were instantly smitten with this salmon kabob recipe from Jennie Miremadi using dishes from The Little Market. With a savory blend of sea salt and spices, these kabobs aren’t overdone and will have your mouth watering for more. The finishing touch? A homemade dill clarified butter (a healthier alternative to regular butter) that complements the salmon flavor. Fire up the grill and let’s get cooking!

Recipe for healthy Salmon Kabobs

Salmon Kabobs with Dill Clarified Butter

Ingredients:

For the dill clarified butter: 

  • 4 ounces clarified butter or ghee
  • 3 tablespoons fresh dill
  • sea salt to taste

For the salmon kabobs:

  • 1 pound of salmon
  • juice of 1 lemon
  • 2 teaspoons olive oil
  • sea salt to taste
  • wooden skewers

Instructions:

For the dill clarified butter:

1. Combine the clarified butter or ghee, fresh dill and sea salt in a food processor until the dill is chopped at the ingredients are combined.

For the salmon kabobs:

1. Soak the wooden skewers in water for about 3 minutes.

2. Cut the salmon into 1.5-inch cubes.

3. Mix the lemon juice, 1 teaspoon of olive oil and a pinch of sea salt in a bowl.

4. Dip the salmon cubes into the lemon-olive oil mixture and place on the pre-soaked skewers.

5. Grill the salmon kabobs in a skillet with 1 teaspoon of olive oil over medium heat or brush salmon kabobs with 1 teaspoon olive oil and grill on a BBQ over medium heat until just cooked through (about 3-4 minutes on each side).

6. Serve with dill clarified butter and enjoy!
