Summer days spent by the pool call for delicious, light, and no-fuss snacks. You want food that doesn’t require much by the way of preparation or utensils, and that is light enough that it won’t leave you feeling bloated in your bikini. One of my favorite al fresco pool foods is the snack skewer, or ‘cold kebab.’ And today I am sharing four of my favorite cold kebab recipes. Whether you’re hosting a pool party or just looking to relax with a beach read, these skewered bites are the perfect light and easy solution. Plus, food on a stick is just fun to eat if you ask me!
Fresh Fruit Skewer
Watermelon + grapes + banana + strawberries, or the fruit of your choice
I chose to use watermelon, grapes, bananas, and strawberries on my fruit skewer, but you can choose whatever fresh fruit you prefer. Think of it like a fruit salad on a stick. These skewers are also delicious frozen for a cool, popsicle-like treat.
Pasta Salad Skewer
Tortellini + olive + cucumber + a drizzle of balsamic vinegar
If traditional pasta salad is your guilty pleasure, this is a delicious and healthy alternative. This skewered version skips the mayonnaise and ensures a good ratio of veggies to pasta in every bite.
Tomato + mozzarella ball + basil leaf + a drizzle of balsamic vinegar
Caprese is such a classic flavor combo that you really can’t go wrong with. I use these ingredients in everything from salads to sandwiches to crostini, and skewers too!
Cheese Plate Skewer
Salami + olive + cheese
The only thing better than a delicious cheese plate is a cheese plate in skewer form. I happen to be a vegetarian, so I always make a couple extra for myself with a little square of baguette in place of the salami.
