You can find this recipe and more easy recipes on my blog at http://www.umbrelladrink.com. I inherited this recipe from my husband's family. It is a perfect weeknight meal. Make sure that you make enough for leftovers!

Ingredients

  • 1 pound chicken
  • 1 Lipon Onion Soup Packet
  • 1 jar apricot preserves
  • 1 bottle Russian Dressing

Directions

  1. Pre-heat the oven to 375 degrees.
  2. Mix the onion soup packet, apricot preserves, and salad dressing in a bowl. Beat the clumps out with a fork.
  3. Pour the mixure into your baking dish. Drown the chicken in the mixture.
  4. Cook for 40 minutes or until your chicken is cooked all the way through.
  5. Serve over rice.
