Makes one 9" pie and a top and bottom pie crust. Fool proof recipe from my culinary class :-)
6 cupsthinly sliced apples
1 teaspoonlemon juice(optional)
1 cupgranulated sugar
1/3 cupall purpose flour
2 cupsall purpose flour
10 tablespoonsice cold water
1 teaspoonground cinnamon
Slice apples into large bowl; toss in lemon juice. In separate bowl, mix together all dry ingredients(1 cup sugar,1 tsp cinnamon, 1/2 tsp nutmeg,1/4 tsp salt, 1/3 cup flour). Sprinkle over apples and mix well to coat. Prepare crust.
For the crust, mix together 2 cups of flour and 1 tsp. of salt. Cut in shortening until the size of large peas. Add water, 1 Tbsp. at a time until dough gathers into a ball(Add more or less water if needed). Roll out into two circles(use extra flour if needed so it doesn't stick). Place bottom crust in a pie plate, prick with a fork. Add filling, then lay on top crust. Cut some slits in the center (for the steam to escape as it bakes).
Bake off finished pie to a golden brown or until the juice bubbles from vents in top crust. 375 degrees for 45 min. to 1 hour
