Chicken Quinoa Lettuce Wraps

Ingredients

  • 1 cup Quinoa
  • 2 chicken breasts (chopped)
  • 1 cup black beans
  • 3/4 cup frozen roasted corn
  • 1/4 cup green onions (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup Trader Joes diced onions, garlic, shallots medley
  • 3/4 cup sliced cherry tomatoes
  • 1 avocado
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 pinch Salt and Pepper to taste
  • 5 iceberg lettuce cups
  • 1/4 cup extra virgin olive oil
  • 1 lemon - zest and juice
  • 1 dash cumin
  • 1/2 tablespoon agave nectar
  • 1 pinch Salt and Pepper to taste

Directions

  1. Cook 1 cup quinoa with 1 cup water, 1 cup chicken broth as per quinoa box instructions
  2. Add garlic/ shallots/ onion mixture to olive oil and saute until softens
  3. Add cooked quinoa to above mixture
  4. Chop chicken breasts and add to quinoa
  5. add all other ingredients
  6. make dressing out of the olive oil, cumin, lemon, and agave
  7. pour over quinoa mixture and top with chopped cilantro
  8. use iceberg lettuce as wrap!
