A Bachelor & His Grill's ORIGINAL, "Blueberry & Roasted Pistachio Crostini." A recipe inspired by my 2012 travels across the Great Lakes & small quaint towns in between... from Mackinaw to Traverse City, Grand Marais, Rochester, & South Haven. Enjoyed along the way were the sweetest local-picked Berries, fresh Greens, & dishes serving the most amazing Cheeses & Baked Breads. My summer anthologized... On a small plate, in a single bite. Ingredients

  • 1 French Baguette, Sliced 1/2"
  • 1 1/2 cups Blueberries
  • 1/2 cup Pistachios, Shelled/Chopped & Salted/Roasted
  • 6 ounces Goat Cheese
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Fresh Rosemary, Chopped
  • 1 teaspoon Lemon Juice
  • 1 pinch Coarse Salt, or to Taste
  • 1 dash Ground Black Peppercorn, or to Taste
  • 1/4 Bunch Fresh Sprigs Thyme

Directions

  1. Pre-Heat oven to 400ºF.
  2. Lightly brush Baguette Slices with Olive Oil, Season with Rosemary, & Lay flat over Baking Sheet.
  3. Place in Oven for 5-10 Minutes, or until Edges turn Golden Brown.
  4. Remove Baguette Slices from Oven & Set aside to Cool.
  5. In an Iron Skillet over Medium/High Heat Dry Roast Pistachios, stirring regularly for 5-7 Minutes.
  6. Set Pistachios aside & allow to COMPLETELY cool before serving.
  7. Fill Mixing Bowl with Blueberries & Lemon Juice… Toss until all Blueberries well-covered.
  8. Spread Goat Cheese over Baguette, then top with Blueberries, Pistachios, & Thyme.
  9. Season with Salt/Pepper, to Taste.
  10. Serve. Enjoy.
