Low Fat Cucumber, Tomato, Red Onion and Feta Salad

This yummy salad is a great as a side dish to a sandwich or soup, and is also great as a snack! With it's beautiful colors and creamy appeal, it's also a wonderful party or shower food to make for your guests! Recipe courtesy of Brittany Chin, RD,LD and bltfoodies.blogspot.com

Ingredients

  • 1 Cucumber, sliced thin into half moon's
  • 1/2 pint Cherry tomatoes, sliced in half
  • 1/2 Red onion, chopped
  • 1/4 cup Athenos Fat Free Mediterranean Feta Cheese
  • 3 tablespoons Italian Dressing
  • 1 tablespoon fresh ground pepper

Directions

  1. Wash vegetables well with water.
  2. Slice cucumber and tomatoes and chop onion. Place into a large mixing bowl.
  3. Drizzle Italian dressing over vegetables.
  4. Add fat free feta cheese to vegetables.
  5. Grate fresh ground pepper over mixture.
  6. Toss lightly with two wooden spoons
  7. Serve and Enjoy!
