Spicy Quinoa Salad

From the blog http://www.umbrelladrink.com Quinoa is like tofu. It doesn't have much flavor until you add ingredients. It could be a breakfast food with cinnamon and sugar or a spicy Mexican dish like this recipe. It's also uber healthy with a good amount of fiber and protein.

Ingredients

  • 1 cup quinoa
  • 1 1/2 cups water
  • 1 can black beans (drained rinsed)
  • 1 can corn (drained)
  • 1 red pepper diced
  • 1/2 fresh jalapeno seeded and diced
  • 1/4 cup fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons cumin
  • 1/2 teaspoon hot sauce
  • salt to taste

Directions

  1. Bring the water to a boil and add quinoa. Cover and reduce heat to a simmer. Cook for about 12 minutes or until the water is absorbed.
  2. Add beans, corn, red pepper, jalapeno, and cilantro.
  3. Stir in olive oil, lime juice, cumin, hot sauce, and salt.
  4. Serve warm or chilled.
