
Here at LaurenConrad.com we're always on the hunt for our new favorite edible indulgence—and we love that we can turn to our amazing members for a little help. When we saw Melissa Panici's S'mores Cheesecake, we knew it had our name written all over it (It's no secret that we LOVE s'mores). A slightly more refined take on the classic campfire treat, this two-in-one recipe sounds like the perfect way to satisfy your sweet tooth. Give it a try and let us know what you think!
Serves 12
Ingredients
Crust:
- 2 ¼ cups GF graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup (1 stick) butter, melted
Filling:
- 2 packages (8 ounces each) cream cheese, softened*
- 1 can (14 ounces) sweetened condensed milk
- 2 teaspoons vanilla extract
- 3 eggs
- 1 cup miniature marshmallows
- 1 cup miniature semisweet chocolate chips
Topping:
- 1 cup miniature marshmallows
- ½ semi-sweet chocolate chips
- 1 tablespoon shortening**
Directions
- Heat oven to 325°
- Place a greased 9 or 10-inch springform pan on a single thickness of heavy-duty foil (about 18 square inches). Securely wrap foil around pan.
- In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom and up the sides of prepared pan; set aside.
- In a large mixing bowl, beat cream cheese, milk and vanilla until smooth. Add eggs; beat on low just until combined. Do not over mix! Stir in chocolate chips and marshmallows. Pour over crust.
- Place springform pan in a large baking pan; add 1 in. of hot water to larger pan.
- Bake for 50-60 minutes or until center is almost set. Sprinkle with marshmallows. Bake for 4-6 minutes longer or until marshmallows are puffed.
- Meanwhile, melt chocolate chips and shortening; stir until smooth. Drizzle over marshmallows.
- Cool on wire rack for 10 minutes.
- Carefully run knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
