Hey guys, Alex here! A few years ago I was introduced to quinoa when I decided to undertake Alejandro Junger’s notorious Clean Diet. For one month my best friend and I vowed to eat clean. Translation: No processed foods, no sugars, (a lot of other “no” items), while eating only organic, natural foods. This was no easy feat, trust me. Needless to say, after exhausting our taste buds of kale smoothies, spinach salads, and the like, we discovered a delicious recipe involving something called “quinoa.” At the time quinoa was a mysterious grain that had yet to break into the heath food spotlight. We didn’t even know how to pronounce it! Nevertheless, after learning that quinoa was a sort of super-food—packed with protein, lots of fiber, and low on carbs—we decided to give that foreboding quinoa recipe a try… And try as we might, it was amazing! My friend and I have since become what you might call “quinoa connoisseurs.” We love to whip up our own off-the-wall quinoa creations and today I am going to share one of my favorites with you that I recently showed to Lauren…
Healthy & Quick Quinoa
Serves 4
Ingredients
- 2 cups quinoa
- 2 tablespoons fresh lemon juice
- 1 tablespoon agave nectar
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup chopped scallions
- ½ cup cranberries
- salt and pepper
Directions
- Place 2 cups dry quinoa and 4 cups of water into a large saucepan. Bring to a boil and let simmer until all of the water is absorbed, stirring occasionally. This usually takes about 15 minutes.
- Cool quinoa by pouring it into a large bowl.
- Add the rest of the ingredients into the quinoa, mixing well.
I love to make a big batch of this on Sunday nights. Throughout the week I include it in my lunches—I toss it over salads, serve it with a side of grilled chicken, or sometimes I eat it a la carte. No matter how you enjoy this delicious grain, it’s healthy, filling, and just downright delicious!

The popularity of quinoa in non-indigenous regions has raised concerns over food security. Due to continued widespread poverty in regions where quinoa is produced, and because few other crops are compatible with the soil and climate in these regions, it is suggested that the inflated price of quinoa disrupts local access to food supplies[17]. In 2013, The Guardian compared quinoa consumption to Peruvian asparagus, a popular Andean crop criticized for excessive water use [18], as "feeding our apparently insatiable 365-day-a-year hunger for this luxury vegetable[...]"[19]
After going over this in my Sustainable Management MBA course, I really hope others realize what impacts we have on other cultures. -

Made this recipe today and found it to be very filling over a little bit of Arugula. However, I substituted Trader Joe's pomegranate seeds for the cranberries which added a nice sweetness, crunch and a ton of other health benefits. The only negative? Coupled with the Scallions, I found 1 tsp of pepper to be too much - I think I'll cut back next time. -
Yum! I love quinoa (the stats are outstanding)and this looks like a great combo to add with it :)

I LOVE quinoa. I get the flavored kinds, like garden basil, and mix it with sliced grilled chicken. I have yet to try it in a salad, thanks for the tip! -

This is a great recipe! I would try adding some sliced almonds or crushed walnuts for a crunchy texture. My go to lunch is a salad made with kale, raspberries, sliced almonds, avocado, baked salmon, apple and a citrus-balsamic vinagrette. Everyone at work drools over it and I've lost a few pounds just enjoying it everyday! -
I have a question. Are you supposed to rinse the quinoa and how do you do it?? I noticed directions on most say to rinse. I understand that,but what kind of strainer do you use and is this step necessary? Thanks! Dana -
I actually don't like the texture of quinoa but I've tried a quinoa rissotto and it was really yummy, garnished with mushrooms. -
