I received lots of requests in response to my post, Slim Tip: Why Break the Fast?, to share the recipe for the egg white omelet I like to have for breakfast, so I have posted the whole thing for you below!

When I have the time, I like to whip up a nice breakfast for myself. Usually, I make an egg white omelet with vegetables. This makes for a great breakfast because the egg whites are full of protein and the veggies have lots of nutrients and fiber.
Below is the basic recipe I follow. Needles to say, I do mix it up based on what vegetables are in season and, more importantly, what's available in my refrigerator. Sometimes I'll have the omelet with a side of toast and berries depending on how much time I have...
Note: This recipe makes one omelet.
Ingredients
- ¼ cup egg whites (sometimes I add in a full egg, with the yolk)
- 1 handful of baby spinach
- ¼ teaspoon (about a pinch) onion powder
- ¼ cup halved cherry tomatoes
- ¼ cup shredded low fat (or skim) grated mozzarella cheese
- Note: A few vegetables I like to sub in are steamed asparagus, sauteed mushrooms, or steamed broccoli.
Instructions
- In a bowl, beat together the egg whites, spinach and onion powder.
- In a small skillet coated with olive oil cooking spray over medium heat, pour in the egg mixture and cook for about 2 to 3 minutes.
- Flip with spatula and cook another 2 minutes. (At this point it will look like a big egg pancake. Yum!)
- Reduce heat to low and sprinkle on cheese and cherry tomatoes and then fold omelet in half (one side over the other). Cook for another minute or so to allow cheese to melt and then serve.
- Add salt and pepper to taste. Enjoy!
This omelet is really simple, quick, and very easy to make! Plus, it's a great way to kick start your day. The best part? You'll notice that the egg + veggie combo will keep you feeling full longer.

I just tried this for the first time today and it was absolutely amazing! It's a great brunch food to fill you up after a big workout. I had just came back from a long track practice and I was so hungry for something healthy. I actually had everything you suggested on the post, and every little bit tasted delicious! Please post more of your breakfast or lunch ideas! -
This was SO good!! I always love trying new ways of incorporating veggies into my recipes.
I used 1/4 cup egg whites and added one whole egg as well. Because I didn't necessarily have all of the exact ingredients, I substituted the baby spinach for regular spinach, the cherry tomatoes for finely chopped regular tomatoes, and the mozzarella cheese for monterey jack cheese. I then paired it with a small fruit smoothie instead of the side of berries and mmm mmm mmmm :) -
I would be starving after this...1/4 cup of egg whites? I always do at least 2 eggs and 1/2-1 cup of veggies...and a piece of fruit.-
True...it sure doesn't sound like much. Especially since breakfast is the most important meal of the day! I NEVER leave the yolk out either. Whole eggs contain the most vitamins and nutrients out of any single source of food. But unfortunately many of us have been fooled that eggs/egg yolks are bad for you!

This is going to be a recipe I will have to practice on (it's hard to make it a perfect pancake circle!), but right now I am enjoying this so much. I don't think I've ever been so happy with my own homemade breakfast. :) -

I love making veggie omelets in the morning!

my friend will absolutely love this because she's a vegetarian and can never think of any omelet toppings to add!

When I have time, I like to make a fruit smoothie. I just add in random fruits in my fridge, and some greek yogurt. Mangoes, peaches, bananas, and berries all work well in any kind of combination.
I also started baking an apple in the oven for about 30 min, slicing it, then putting it in oatmeal and adding brown sugar and raisins.
I normally just make 2 scrambled eggs with a kraft single, wheat toast and coffee.

Im going to make this weekend! I really dont eat eggs but Im going to try it!!
Really in the morning I eat a fiber bar on my way out the door...or some fruit and a glass of water! Or I have some ceral...Im not really a breakfast person

Egg whites are so delicious- I sometimes put them between two pieces of whole wheat toast for a nice, lil' breakfast sammy! Thanks for the recipe
