One of my favorite weekly treats is to indulge in is a big, delicious brunch on Sunday mornings complete with pancakes, bacon, freshly picked berries and farmer's market fruits. Here's a little peek into my Sunday morning...
First order of business is mixing up the pancake mix...

Then it's time to cook them up...

This is the best part...adding the blueberries. 

My favorite pancake recipe is a total no-brainer since it uses a basic pancake mix...but it does have a few surprise ingredients that give it a total melt-in-your-mouth flavor. Here's the recipe:
Ingredients
- 2 cups Bisquick mix
- 1 cup milk
- 2 eggs
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 2 tablespoons fresh lemon juice
- 2 cups fresh blueberries
Instructions
- Heat griddle or pan on medium-high heat and grease with butter.
- Mix all of the ingredients together.
- Pour batter onto pan (about ¼ cup per pancake).
- Cook until bubbles forms and then drop in a small handful of blueberries onto each pancake.
- Once the edges are cooked, flip the pancake and cook until golden brown.

Serve the pancakes with your favorite fruit and a side of bacon and enjoy with freshly squeezed orange juice or a mimosa!

This was such a perfect pancake! I tried it for guests and they loved the pancakes, too. I like the fact that you can add lots of blueberries or just a few - and modify for each pancake. I was a bit hesitant about the lemon juice, but it brightened up the recipe. -

I tried your pancake recipe this morning and it was so good!!! My family loved them. I didn't have any blueberries so I added banana slices instead and it was yummy! I will try adding different fruits next time. Thanks lauren! -

We make fresh orange juice and always have a big pot of tea! :-) Yumm!

We try to do a sunday brunch with the family in my mum and dad's place. Good way to keep track of who's doing what, how they are doing and just remembering good old times.
We start with a grapefruit slides open with sugar on top. Just spoon it out.
Then we have eggs the way you want to with bacon and bread. Usually it scramble eggs, but you can also make it with a sunny side up or hard boiled egg. Depends on what mood you're in. :-)
Next there are spreads on the table if you're still hungry for a sandwhich. Seeing how I live in Holland it usually consists of cheese.

Love it! You look so cute in your Sunday lounge wear cooking up a storm. My Sunday brunch HAS to consist of egg benedict (yes, oh so unhealthy I know!).. but it can pass once a week. In my mind, Sunday is the day that you should treat yourself to anything you want 'R&R'.

Tiffani, Im super jelly (jealous) of your farmers market. My local farmers market doesnt even have enough seating to eat and the food is usually not breakfast stuff, let alone crepes. -
I LOVE brunch... really, I could eat breakfast anytime-- but my favorite is when I go to our local Farmer's Market. They have live music, an open breeze way, cafe seating & lively atmosphere. I usually get crepes from La Boehme Crepe Company! They make them fresh on the spot! Deliciouso!

Absolutely love blueberries!! Love the way you add the blueberries,I just added the fruit with the mix and then into the pan. Your way is much more fun, BTW hate the ad comments.
