Good Eats: Overnight Oats

As you might already know, breakfast is essential in my book. During the colder months, I prefer something warm in the morning, like my veggie omelet, a hardboiled egg with toast, or a comforting bowl of steel cut oatmeal. However, when things warm up I tend to gravitate toward colder offerings such as yogurt parfaits or fresh fruit. Recently though, I found an entirely new way to enjoy a wintertime favorite. It may sound odd, but chilled, overnight oatmeal is my new favorite. It's not your average oatmeal so don't write it off just yet because it's cold... Behold: Overnight Oats. Basically, it's a perfect mix of creamy yogurt goodness, rolled oats and your favorite fruity toppings. The oats soak in a mixture of almond milk and Greek yogurt overnight, thus softening them to perfection by the morning. I love it because I can wake up before my workout and quickly pull it out of the fridge and enjoy it on the go. It's so easy, and honestly, so so good. Simply mix all of the ingredients together and set it in your fridge in a sealed mason jar at night, and instantly enjoy the next morning.

I tested out a few different recipes (Pepper Lynn, Yoke Yolke, and Fit Foodie Finds) and came up with my own interpretation that's a bit more basic. Check it out, give it a try, and let me know what you think!

Ingredients

  • 2/3 cup almond milk (or milk of your choice)
  • 1/2 cup organic rolled oats
  • 1/2 cup vanilla (or plain) Greek yogurt (I used non-fat)
  • 1 pinch of cinnamon

 

Instructions

  1. The night before you plan to eat your oats, mix together all of the ingredients listed above and seal in an airtight container.
  2. Refrigerate the mixture overnight (they will be ready in about 3 hours, but overnight is best).
  3. Wake up and enjoy the next day!

 

I like to add fresh berries and a little agave nectar in the morning or sometimes I top it off with a pinch of brown sugar, a handful of walnuts and some sliced up banana. Most cereal toppings work well though–honey, fruit, whatever... Test out a few different combinations and see what you like best.

I love having this in the morning because it keeps me full and feeling good. It's a great way to start your day since the oats are filling and the yogurt is packed with healthy probiotics and lots of calcium. Plus almost every ingredient is a flat-belly food! Sweet.

      Hi Lauren, I think its really important to explain the full benefits of overnight oats. Besides being super convenient, soaking oats (and most grains/nuts) for a minimum of 7 hours breaks down the phytic acid. This is important as it allows for optimal absorption of vitamins and minerals. Without soaking whole grains and nuts, we are robbing our body of vital vitamins and minerals which the phytic acid binds to, therefore blocking optimal absorption. I suggest your team do some research into this to share with your readers :)

      Is 2/3 cup of milk meant to cook the oats or to you have to put 2/3 cup of milk above the milk you used to cook the oats?

      Yum I love oats :) what would you recommend using instead of the yoghurt? I am recently dairy free and struggle to think of ideas (anything other than soy yoghurt!) Thanks :) xx

        Hi Amber, coconut milk would work well and give a nice flavor and thickness. Coconut yogurt is also really yummy and you can find it at Whole Foods or most health food shops. I'd stay away from too many soy products :)

      i made this for the first time this morning and it was amazing. It was so tasty and mine wasn't runny at all. I added a touch of vanilla and i put some flax seeds in it as well. it was soooooo good

      I can't get enough of this recipe. I've had it for breakfast every day this week! One day I tried adding peaches, another day a banana, and I think the peaches were best. Best, I was full for hours. I know I have to switch up my diet, so I'll have an egg white and veggie omelet tomorrow, but I really really want oats lol.

        I've also not had a problem with this recipe thickening up. I follow it to the T, and make it probably 8 to 10 hours before I plan to eat it.

      In order for it to not be runny You need to add chia seeds everytime you make overnigh oats, I don't know how they could let that out. Hope it works.

        Sorry but you don't have to add chia seeds to keep it thick. Using full fat Greek yogurt works just fine and it's best to use full fat products anyway as they are whole and not laden with thickeners/emulsifiers, etc. Chia seeds do help and are a great addition especially in terms of nutritional benefits, but they aren't absolutely necessary.
