
Labor Day is just around the corner so I thought it would be fun to share three of my favorite simple salads to whip up for summer barbeques... Each one can be made in advance and packed up in a reusable container for easy transport. I've made these salads many times and they've proven to be total people pleasers time and time again...
Watermelon Salad
Ingredients
- 1 watermelon, cubed
- 1 cup feta, crumbled
- fresh mint leaves
Directions
- Mix together cubed watermelon, feta and shredded mint leaves.
- Chill for 15 minutes.
- Serve cold or room temperature.
Black Bean & Corn Salad
Ingredients
- 1 can of black beans, strained and rinsed
- 3 husks of corn
- 1 cup of fresh pico de gallo
Directions
- Preheat oven to 350-degrees.
- Peel back husks on corn, remove the stringy bits and then put husks back in place.
- Place corn into oven (on center rack) for 30 minutes.
- Once corn has cooked, remove husks and cut corn kernels off the cob using a sharp knife.
- In a large bowl, mix together corn, black beans and pico de gallo.
Pasta Salad
Ingredients
- 4 cups of bow tie pasta, cooked
- 2 cloves of garlic, minced
- 3 cups cherry tomatoes, halved
- 4 tablespoons of olive oil
- fresh basil leaves, thinly sliced
- salt and pepper to taste
Directions
- In a large bowl, mix together pasta, garlic, tomatoes, olive oil, and basil.
- Once mixed, add in salt and pepper to taste.
- Serve cold or at room temperature.
And there you have it–three super simple salads that can be whipped up in under an hour.

@ Emma You can make pico de gallo. It is really easy. All you need is tomato, onion, and green chiles, and a fresh lime. If you can find all of those ingredients it is fairly simple to make.

Hey i live in Australia and I can't find pico de gallo anywhere. Is there somethign else I could use to put in the salad?

I'm an italian girl and I have that pasta salad every summer because it's really really light...a little tip: don't use garlic and add a little bit of mozzarella cubed...it's 2000 times much better...let give a try ;) enjoy your pasta salad ;)
p.s.: you can also add some rocket vegetable ;) well, I'm hungry right now ;)

I'd love to try the bowtie pasta salad. That's the only one that looks appealing to me. The black bean & corn salad looks good too, except it reminds me of what I get at Chipotle ;0)

I always just love boiling some tri-color pasta, mixing it with Italian dressing, banana peppers and cherry tomatoes! Perfect for Labor Day or tailgating on Saturdays :-)

I do a greek pasta salad.
4 cups cooked tri-color rotini noodles, 1 cup chopped red onion, 1 each chopped green bell pepper and red pepper, 1/2 cup of black olives sliced, 1 cup feta cheese and add italian dressing to pull it together. My kids love it!! And it will store for up to 5 days in your fridge!

I'm obsessed with the watermelon salad!! I eat it all the time. It's best topped off with some fresh lime juice. The bean salsa is another go to when I'm bringing something to a party. Easy and delicious and everyone loves it!!
